I'm curious how thieving works in the game and how do you do perform the action? for Example the stealing gold or an Item from shops or picking pockets

Crouch. When you hover the mouse cursor over your target, it will let you pickpocket. A window will pop up to let you select which item (or gold) you want to try and steal.
Highly recommend going into turn based mode, otherwise they can turn around and find you much easier.

On top of turn based mode, separate the rogue from the party and cast invisibility + cleric stealth buff. It is fun to watch how the vendor who is being robbed repeatedly every time runs to the rest of your party who tells him they have nothing to do with it.

Keep in mind too that some objects are easier to steal than others. Small items like jewelry are practically a gimme. That large suit of armor is hard to stuff down your pants...
I've found the cleric's guidance spell is also useful for the bonus on the skill check.

It is fun to watch how the vendor who is being robbed repeatedly every time runs to the rest of your party who tells him they have nothing to do with it. Also works great when you know an ambush is and you steal all their loot before fighting them so they don't have them for the fight. Invisibility for the win!

Indeed, it is a shame when those goblins waste those precious special effect arrows on you when you can sell them later for a profit. Dwarven meat was kinda gross though, I wish I haven't

Keep in mind too that some objects are easier to steal than others. The pickpocked UI has an ice indicator for this. Don't go for it when the indicator is red, it basically means a 20/20 roll I believe.

Thieving/Pickpocketing is actually really really broken,
Crouch/Hide, then cast any buffs (invisibility and guidance is what you want) on Astarion (if you're not playing a rogue yourself) and enter turn based, then just head to a merchant and steal his gold and preferably all his arrows/spellscrolls/potions. With Astarion + guidance spellscrolls and arrows have a DC of 1 or 2 I believe, gold is a bit trickier because the DC of gold increases if an NPC is carrying more of it. When you've cleaned the NPC out, just go to camp, long rest and the NPC's inventory will be restocked. A bit time consuming and totally broken, but if you need the cash for whatever then this is the way.

I don't know, I kinda liked it. You have to stack all the buffs for this, Shadowheart's cleric buff + invis + professional rogue. Why wouldn't you be able to steal everything in this combo? Big/expensive items are still not a sure thing.

I've been running a lightfoot halfling rogue and he has pretty much wiped out Arron of all goodies, plus relieved him of his gold several times. Dammon was a bit different as after I was able to get the primary items that I most wanted from his inventory, plus hit his own gold reserves at least twice, the next time I returned to rob him I was immediately attacked by the tieflings as a thief?
I decided that my last "retreat" from his corner of the Druid Grove had not gone as unnoticed as I had thought, so I stopped entering that particular section of the Grove for this playthrough.
Roah Moonglow has thus far vexed me in the Goblin Camp. She keeps moving around too much, and my stealthy attempts to swipe her stuff have not worked out so far? Admittedly this is a minor quibble, as my two efforts to eliminate the goblin leaders has resulted in my party getting slaughtered (although the second time, I came awfully close to doing so, having whitttled down most with the exception of Gut and a few others who entered the fray at the eleventh hour).

For Roah, the best thing to do is wipe out all the goblins in the scantum first, she and her guards won't interfere. (If you're having trouble, keep practicing, it's not that hard when you get the hang of it. Especially when you can long rest in the middle of it.) Then you can attack Roah and guards and steal their stuff. Best cache of gold in the game.
The best way to play her, and the traders at the toll house and outside the scantum, is to trade with them for anything you want, then kill them later. You always get to loot back everything you sold them. If you just kill them, a lot of their wares disappear.

My Most hillarious moment was when Zevlor got knocked out by the leader of the mercs on entry to the grove, went right up and nicked those healer gloves like a boss. Roah is the easiest of all to pickpocket as she doesn't even realise, Most annoying is Dammon as he basically has an emotional breakdown and runs around the map after 5 or so times of emptying him, he's even outside the grove sometimes blarting like a baby, Auntie Ethel is a no no, just dont as i ended my game right there as level 2, the gobbo in the fort is easy as long as you get him when he's taking a leek and nobody is walking around. Pickpocketed the goblin boss and nicked his hammer after he had done the ritual so he was splatted in a few moves. In fact pickpocketing is the most OP thing in the game as you can empty a boss before the fight of potions, weapons etc. Well worth practicing. By level one during my runs I have all my party essentially geared after two camps so it makes fights a doddle. Use astarion and dont bother wasting invis pots etc as they are good for fights or keeping blessing on as you want to keep shadow invisible to do so, just fast travel the rogue to the nearest point and pleed innocence then you are left alone.
Was "legless" but it seems I have my gamer tag back..Seleniumcodec on steam as I forgot my password one day and created another profile.

All you have to do is right-click on the gold stack and select "split." Splitting it into smaller stacks makes the new stacks easier to steal.
Steal their gold, buy the items you want, then steal the gold back. If an item is still to pricy after you stole their gold, then take a long rest. That recharges their gold on hand. Steal that new gold, buy the item, then steal the gold back again.
I don't even feel guilty because my rogue is a thief after all. I'm just staying in character!

Looks like I spoke too soon. Seems they made stealing a lot harder in the latest patch.
Even at level 4 my rogue thief is unable to steal from merchants without getting caught. Sometimes he can talk his way out of it, but only rarely.
