It's been 100.2 hours on ultra settings over the past several days and so far and I haven't bumped into anything especially game breaking until the 90-ish hour mark.

As it stands...
Load times have become concerningly long, the amount of time it takes to save has also dramatically increased, the game stutters at every other turn (and worse in the rain) and the act of loading a save tends to result in the game or even my whole computer crashing.

I have tried most of the usual troubleshooting suggestions: cleaning up my computer, disabling firewalls, ditching any potentially interfering programs, reducing my graphics settings to the bare minimum, deleting certain files and having steam verify the integrity of said files to replace them with fresh ones.
None of it has worked so far.

If anyone knows a fix for this particular problem I'd be much obliged.

Did you have a windows 10 update?

I'm having a similar experience. My computer was having no issue running the game on Ultra until a windows update last week, now Baldur's Gate 3 struggles to load assets, I've had a few crashes, and prolonged time with t-poses. This happens on all graphic settings now. (I've gone through all the FAQ suggestions from Larian).

Also my computer only has 8GB of ram. I've been waiting for patch 4 to find out if I should upgrade my ram.

Not since, last week. Well before this started happening.

I have also tried completely uninstalling the game from my computer and even after reinstalling the game it still chugs really badly during camera movement, cutscenes and character animations. And trying to load back to a previous save just ends with the game ceasing to respond and crashing.

I've done the same. I wondered if it was also tied to a game event (I had just done most of the evil route and blood puddles/lakes were everywhere), and deleted my saves. Even with new save files the issue persists.

I was hoping it was tied to the windows update.

I have looked around the internet for solutions fixes and such, everything from tweaking my nvidia settings to giving the game top priority to clearing all the junk off of my pc.
Currently the game is now suffering from terminally bad load times (12 - 20 minutes) when trying to load a save game.

I will continue searching for solutions but after taking the second most drastic action possible I am not confident.

How big is the save file?

I kind of notice load time getting longer and longer as I progress in the game. But 12min ...

I'm testing to see if it's tied to the profile and not the saves. I'll make an update on the results.

Update: The issue doesn't seem to be tied to saves or profiles.

Did a full wipe on the second reinstall. No profiles, save files all of it and everything even related to the game completely erased. No improvements whatsoever.
Cleared up some space and ran a better defrag in case that was causing issues, minimal improvement.
Reduced graphics from ultra to medium again and the audio from high to low and strangely enough everything is still pretty sluggish but at least playable.

Most importantly load times are better and result in less crashes.

Not exactly "fixed" but at least better than it was.

Will continue looking into the cause for this though.

What's your rig stats? Just curious. I'm only 15ish hours in, load times are good so far. I average around 50ish FPS, which I feel is low since I run RDR2 maxed around 60fps average. I find it strange quicksave creates a new save everytime...seems like a lot of saves to maybe clog stuff up? I'm used to having a save slot, and a quicksave slot. Quicksave as your moving along(overwriting the last), Save before big events or at the end of sessions.

So I installed my new RAM. Going from (1 stick, 8GB) to (2 stick, 32GB) the issues are gone. The game may just not be optimized for 8GB at the moment and the windows update I had reduced the share of RAM Baldur's Gate 3 could use.
