Why just remake BG1 & 2 then? Why not Pool of Radiance, Curse of the Azure Bonds, Secret of the Silver Blades, and Neverwinter Nights? Why? Because it's been done, it is classic, players already know the story, and the backlash you'd get from hardcore fans would be tremendous. Those are all great games, mind you. They could be redone with modern graphics and turn into amazing games again in a new iteration... but the temptation to screw around with them just to add some "new" or bring them "up to speed with modern ideology" would simply be too great. People have a hard time not injecting their own spin on things. Sometimes that works out, but usually it is death to any sort of attempt at a remake. You'd most likely end up expending an incredible amount of time and resources just to end up with a hodge-podge game that no one would be truly happy with and that would never fully live up to anyone's expectations.

Unfortunately, I don't think that would help much:
Andrew Rechner, along with a very small team, took 7 years to recreate BG1+TOSC in the ( 2005-era ) NWN2 engine; without adding to the original sound assets at all, just making an updated 3D experience, with scripting as close as possible to the original game. It has taken them another 7 years to do BG2+TOB, which they hope to release in 2021.
The tools available for NWN2 were actually very good ( I used them myself ) but the scale of such a task is more than most people understand . Another 15 years on, even with a good BG3 toolkit, I suspect it would be very difficult to do much better than Andrew & friends without a really large multi-talented modding team.
As an alternative comparison, The Elder Scrolls Renewal Project has been trundling along for 15 years now, trying to rebuild Morrowind in the Oblivion engine, and subsequently rebuild both Morrowind and Oblivion in the Skyrim engine. The "Skywind" team have got closest to actually releasing anything, but I would guess they are still some years away, as they have essentially had to build all the visual and audio assets from scratch. Even with the dozens ( possibly hundreds ) of enthusiastic modders contributing, it may not even see a release before TES6 appears, if ever.
I honestly doubt there are enough D&D afficionados that would be prepared to put in the work necessary to re-create full games from the past, considering that even elder scrolls fans ( probably the largest, most enthusiastic modding community ) struggle with it.
On a brighter note, a good toolkit might at least allow everyone to experience BG3 the way they want, as well as give us new, interesting stories from those that want to author them with existing assets.
