I see a lot of people gospel quoting that Sven said we will have ALL of PHB content in the game.

He states specifically that the goal is to include as much as possible from the 5E PHB but the will not include everything. They’ve said as much before and this is what they are sticking to so that they are free to cut content to get the game through the door. Do not misquote him or you’re doing both this game and the community a disservice by setting false expectations.
Personaly i would recomend to see that video since cca 2:30 ... Since previous question was about "what all will be in Early Acess" ... so this next question about "all 5e" can be only taken as extend for the previous question, wich would mean that "no, not whole 5e will be in Early Acess" ...
But even if, and yes there is IF ... Swen was talking about full release, all he sais here is that not whole PHB will be included in game ... Feel free to corect me if im wrong, but that would mean not just races, classes and sub-classes ... but also spells, monsters, deities, weapons and other stuff ... So ... if we would take this statement litteraly ... all you need to do is "not include a single Cobold" to this game, and you allready didnt include whole PHB. So ... as usualy, this statement dont tell us anything specific.

I still dont understand why cant we change Race for our hirelings. Lets us play Githyanki as racist as they trully are!

Which is considerably broader of a question than the initial start of talking about PHB. All of 5e is PHB, DMG, XGE, TCE, SCAG, EGW, MM, Eberron, VRG, EEC, VGM, and an upcoming dragon book. And I didn't even go into specific campaign modules and things they add. 5e is huge, and it is clear they will not add all of 5e. But based on other interviews, all the player content of the PHB is definitely being added. And in fact, I want to ask, "Why do you think it will not be added?" Tbh though, there are some spells from PHB I think won't be added because they are functionally impossible, such as Message, but when I say "All" I tend to mean Classes and Races. Do you think it is logistically improbably? Would it cost too much? Is it too ambitious? This isn't me trying to build a strawman, I just don't know exactly the why you believe this and I want to know, to both understand and possible argue against because this is a topic worth discussing.

It’s pretty clear to me that Sven was answering the question regarding PHB. There’s no way they could possibly include those other books. That’s an insane amount of content and makes no sense.
Who cares? I mean really ... everything from the PHB ....the game will be fine with half of it ..unless you want to wait for ever or get the cyberpunk release.
For example, if Larian decide to "not implement" Necromancer, i can imagine a lot of angry people. On the other hand, if Larian decide to "not implement" Blowpipe ... the number of angry people will be conciderably lower.

What's a blowpipe? Like a Blowgun? Like you blow through it to shoot darts at people?
I could live without a blowgun. However it would be pretty funny to create a character around Blowgun proficiency.
I mean, 1 Damage, and you can apply poisons to better silent weapons anyways... Though, if it is something that doesn't proc aggro on the first shot it could be interesting to use, poison enemies before you actually fight them.
But many people request content from other books. Obviously yes, injecting every book into this game would be at best improbable in scope and more likely impossible. But people still desire that because they want a full dnd 5e game. But the PHB is very very possible, without any need for updates or DLC to inject missing content. Personally I feel like you are overestimating how hard it would be to add subclasses when the mechanics for most of them are done, in fact I'd look at games like Pathfinder that have included a LOT of their source material which I feel amounts to more than the PHB in content easily. In fact, if we don't get more than the PHB (not counting what we already got like Gith) I will be surprised. Larian is the type to add all they want and stop when they start to get too far, like implementing Dinosaurs.

He says clearly some people are hoping to get all of Players Handbook. You are correct that some things out of practically example fly spell will not be implemented.
However he states they want manuveribility to cut some things out. I do not believe there is even 5% chance all PHB subclasses will be included at full release. I do believe all PHB classes will be represented and that each class will have minimum 2 subclasses (could be more subclasses hopefully added true and in Cleric case more domains hopefully added currently 3 Domains in Early Alpha) for full release date.
