You speak for yourself here I'm afraid. I for one quite enjoy the feeling of negating an enemies attack. And negating an attack very much is doing something. A potentially very important something depending on the tide of battle. Also if by Spell Mantle you mean "mantle of spell resistance" then that is far more like "doing nothing." Passively wearing an item that improves your chancesto stop a spell vs actually making the decision yourself to stop an enemy spell.
Personally I could probably enjoy counterspelling as well.

But I can't see myself enjoying a pop-up window that would freeze the game every time someone casts a spell or attacks with a cantrip. "Would you like to counter this? ...how about this? What about this then? Shall we counter this one?.."

A mix of conditions and reaction pop-ups might be best. Similar to DAO Combat Tactics, you specify conditions for when a pop-up appears.

For all your spellcasters, simply set the "Lowest level spell to show a counterspell pop-up confirmation window" to 1st or Xth level. There'd also be an option to automatically counterspell if the conditions are met instead of showing a confirmation "yes/no" pop-up.

This also allows you to e.g., set what level of smite is used during opportunity attacks.

I mean, I don't actively enjoy the windows either. But they're a necessary and for me neutral requirement for the thing I do enjoy, which is the control and feeling of strategy which comes from having proper reactions.

From experience, Counterspell resolves in extremes. Being absolutely epic or a mis-used spell slot. It'll definitely be the most problematic reaction to implement.

I never realized how much I missed its role in other turn-based computer game until I started using (or choosing to skip it) it Solasta and having a fucking blast with it, frankly.

Party control in Baldur's Gate 3 is a complete mess that begs to be addressed. SAY NO TO THE TOILET CHAIN

The only way to do it would be with slow down zoom in camera, a better version of critical hit!! and a right click radial menu for reactions to go with it.

When reaction should trigger you get a slow down zoom in and then you can right click and pick a different reaction from radial menu during the slow down. IF you don't click anything the one that was selected before triggers, same as they do now. One of the options in menu would be do not trigger AOO, you could pick what you want really fast. would hardly do anything to speed of the combat.

Sadly there is multiplayer to consider and i have no clue if that would work for it.
