Maybe I'm just dumb, but there are times where I want my rogue or sorcerer so break away from the group and perform individual tasks and then return to the party. These tasks might include, clearing traps, provoking combat in order to set up ambushes, placing traps before combat, scouting etc...

Perhaps theres a way to do this already and I haven't figured it out yet, in which case I'd hope someone might inform me HOW to do this in a non-forum tryhard sort of way.

I also recall party formations being a big part of the first 2 iterations of this game, and do hope that they are in the full release. Those formations I recall, were extremely helpful in surprise combat with dragons specifically.

There are two ways to dismantle your grop ...
Either there is button under their portaits, or you can set keybind on "toggle group mode" ...

If you only want to separate single person from your group, simply "catch" his portrait by left mouse and drag it anywhere away from the group, once you see the chain snap ... they are ungrouped.
Alternative approach is clicking on their portrait by right mouse button and pick option "ungroup"

As far as i know there arent any option to lay traps in game ...
Nor any formations.

Unfortunately there won't be any formations. Unlike in BG1&2 you never control the party - just one characters and others follow that character (clumsily).
