In the vid my character is visually concealed behind a barrel, yet she gets detected.
I think this happens because the standing hitbox is always active and is what is actually used to determine LOS. I think this next vid proves that; pay attention to how far up my cursor can target the bolt.
It would be cool if crouching actually shortened your hitbox so you could hide or take cover from enemies behind short objects and terrain.
But I wonder why the game is using hitboxes for projectiles at all. No one is actually aiming, right? Aren't all hits or misses determined by simulated dice throws?
They don't "use hitboxes" but they check for line of sight, which is a slightly different concept. Past that, if it's a hit or miss is strongly dependent on what type of attack is used (i.e. magic missiles always hit if there's LOS while a firebolt needs to pass a roll).

Ikke, I think I remember having to aim at certain parts of enemies where they were just low enough for high ground advantage or something like that, but it's a fuzzy memory. I'll try to find proof of that when next I play.
Also, when I'm talking about hitboxes I'm talking about the invisible part of a character that lets you click to connect a spell. I'm not saying that if a projectile passes that invisible part that it's a guaranteed hit or anything. It's more like a hitbox to your cursor.
