...I'm asking because I just realized that I still have all the player profiles I deleted multiple times, all the way back to Patch 1, since Steam Cloud keeps redownloading them no matter what.

which profile ?

a few patches back Larian changed the location of their profiles from documents/ Larian/ bg3 to C / users / %username% / Larian / bg3 and the old profile in documenst is still synced with their server i.e, busted by Larian and needs to be fixed at their end [assumes Windows]

the new profile location can be unsyned as long as the profile isn't in use i.e, not still on some other device like a spare laptop or sitting in a 'cross save' folder

As I pointed no matter how many times I manually delete the old, obsolete profiles, the client keeps downloading them again.

And I don’t even get an in-game option to remove them (or interact with them at all).

There’s a super tiny ass X that you can click in-game to delete profiles.

I only know because I had to google this to get rid of a profile that had mods corrupted by the patch.

The problem is... These old profiles aren't even showing up in game anymore for me... But they keep re-downloading anyway, no matter what.

If you want to delete cloud saves from steam there’s no easy way. Either disable cloud-syncing or try google. There’s a method of doing that basically tricks steam cloud to delete old saves.

Well, here's the thing. I would NOT want to disable cloud saves in general. It's a very useful tool to have and I'm glad for its existence.

I would just love if the game/Steam client would stop re-downloading old-ass obsolete profiles that don't even work in the game anymore.

Larian can’t do anything themselves, it’s an issue with Steam Cloud. Other than causing a sync conflict to replace the already existing cloud saves there’s nothing you can do.

I'm fairly sure it's Larian's job to decide/set what data Steam Cloud is exactly supposed to backup, but either way, someone needs to fix this.
I have 1,5 GB of player profiles (with the respective saves etc) and 95% of this is obsolete data I have no use for.
