Yes, skill check rolling is something I have mixed feelings about. It definitely intrudes on the dialogue pacing, which just loops but to weird confused nature of BG3 as a game - we will build entire new team to bring cinematics to the game, but then stop of our conversations to a halt to make the player roll a dice couple times in a row.
A brief roll that happens that you select the dialogue option would make more sense, but that would be tricky to pull of and allow companions to contribute to the roll.
As to dialogue UI, I do to like the classic cRPG style, but with cinematics I think Larian wants to keep the UI minimal (unless it's a dice roll - again, just confused design). I think Dragon Age:O looked similar and it seems to serve as primary BioWare reference.

Yes, while I typing through it I also think how dialogue box may also cause unnecessary problem to the cinematic approach of the game. I think current implementation is fine, my suggestions are largely nice to haves.
