You can make the game harder with self imposed challenges, like playing solo or not using your long rests that you currently have an unlimited amount of. It would be nice if the game provided difficulty though. I am hopeful that once we have difficulty settings we can tweak it and worst case scenario there's always mods. I find it that the game is fairly easy even with barely using long rests and playing solo for most of the game (even if you don't abuse cheese tactics).
Overleveling content will probably always be somewhat of an issue if you take the genocide route and kill every NPC because that will get you so much more XP than someone not doing that which should be a "normal" playthrough. If you balance the game around people killing everything then people might feel pressured into doing that which shouldn't really be the case. I could see them implementing XP for talking your way out of situations and reducing the XP gained for killing NPCs that you sided with. This way completing a quest could compete with completing a quest then killing the quest giver or simply just kill all on sight. Say you protect the grove from the goblins, the optimal way to do things is to just murder all of them afterwards anyway, but it might not be the most fun or reasonable thing to do.
