So I just made my way down to the mimics. And instead of attempting to open the chest, I cast Cloud of Dagger's on them. Instead of initiating combat, it locked the character and the targeted chest into some kind of dialoge bug. It shows the black / white chat bubble over my character's head and the chests head. When the cloud of dagger's ran out of turns, it dissipated and the chat bubbles remained. And now I appear to be stuck. I then attacked with my rogue (Astarion), and used a ranged attack. The mimic's popped to life, but it also put the entire group with chat bubbles over their heads. And it appears to have locked them all in this state.

After a few minutes. I hit the spacebar to "end the turn" while locked in some weird chat bubble state... And combat began properly.

I don’t think it was your Cloud of Daggers. My party all failed the perception check to find the real chest, so I thought I’d have a go casting Light on a fake one, and that made the other mimics appear and triggered everyone to appear with speech bubbles over their heads as though in dialogue, locked in that state. I assume there’s going to be something said at that point in the full release.

As you say, pressing space bar will move things along, as I think it does some other stuck dialogue related issues elsewhere.

Yes, it seems to be any preemptive attcks trigger this chat bubble effect. I did a regular ranged attack and it locked me in the chat bubble state. Pressing spacebar fixed it. But it doesn't feel right.

Agreed, this looks like some sort of bug, possibly a missing (or as yet unimplemented) dialogue or cutscene.
