That is a good point I had not thought about. Even if using soul coins isn't how you get these hirelings (I hope it isn't, I think just plain cash is the simpler option and provides players with more flexibility) what if you're playing a character who's against undead? Like say... most clerics of good deities would be? Then from a roleplay standpoint this method of hireling would be anathema to your character. An issue that the far simpler approach of just making hirelings hireable people wouldn't bring up at all. It's another instance of Larian just making things more complicated than they need to be.

But on the subject of the morality of using soil coins for this purpose, Larian could say that summoning them in this manner basically provides them a less terrible way to pay off their debt to hell and thus avoid going there, which is probably a good thing.
