Well, it will if you don't mind spending most of your time with your face in the dirt waiting to be rezzed. Not only would your hp be horrible, so would your AC on a STR monk.

What would be the best monk subclass for this approach in your opinion?
Abjuration wizard.

Really, githyanki make terrible monks. Play a human, wood elf or gold dwarf monk, or play a melee wizard githyanki.

Githzeri make good monks, but they are not in the game (unless you use a mod).
