I hope they would implement multitude of spells not only for Poison, but also for Cold, Lightning and Acid as well. Currently Fire based Draconic Sorcerer is simply best mostly because you get tools to utilize pretty much every spell level, while other elements have gaps. While Fire resistance is most common to "compensate", that is not a justification, since Fire Draconic Sorcerer can get it too for 1 SP (and it will be the most useful) and overcome with Elemental Adept feat.
For example, spell progression for different elements:
Fire - Burning Hands / Chromatic Orb at spell level 1, Scorching Rays at spell level 2, Fireball at spell level 3.
Cold - Ice Knife / Chromatic Orb at spell level 1, no spell at spell level 2, no spell at spell level 3.
Lightning - Witch Bolt / Chromatic Orb at spell level 1, no spell at spell level 2, Lightning Bolt at spell level 3.
Acid - Chromatic Orb at spell level 1, Acid Arrow at spell level 2, no spell at spell level 3.
Poison - Chromatic Orb / Ray of Sickness at spell level 1, no spell at spell level 2, no spell at spell level 3.
Tabletop partially addressed that with Transmuted Spell metamagic, but I'm not sure it will be implemented in BG3. Even if yes, that still requires spending Sorcery Points and blocking access to other Metamagic feats to use on that spell, so is not a very good solution on its own. Expanding elemental spell list from non-PHB spells is better, however would also require buffs to some undertuned spells like Snowball Swarm.
