Given what I've seen of Astarion in early access, classes that seamlessly blend in with Balduran (high) society make the most sense so rogue, bard, fighter to some extent, cleric at a stretch... Barbarian and druid probably wouldn't work imo and not paladin due to the whole vampire thing. But yeah, I don't really see anything about him which makes any class entirely implausible.
