How about the time he teaches you a spell and then tells you that it takes years of study to be able to do it on your own. At the very core of the classes the difference between a sorcerer and a wizard is the years of studying requirement.

Respec =/= memory loss.
When you talk with him a lot, in different dialogue he tells you that he still have all knowledge, but lacks strong connection to weave, that would allow him cast things as he did.
