I don't think their going to be trash,

First, Resistance to elements is HUGE, and will be more so in HARDCORE.

The breath weapon with its increasing D6 is good, once a day yes... but its not full dragon lol, Lets see how Larian has the save. If its anything like my clerics sacred flame LOL

BLAH that thing never hits.

Also I think the Dragonborn should get +2str +2Con like a shield dwarf do to if nothing else there size, and maybe... +2 intelligence? ok +1

grease Yes, there will be fun ways to play them. I just wanted to throw out that video,

imagine if you will... Red/Gold/Brass dragonborn with a belt full of grease bottle running at a large crowd of enemies throwing himself into the mob and lets loose his breath weapon... Nice brah, and is able to stand in the middle of it and take no dmg.
