Have you tried this :
When you delete the game via Steam, try to delete any remaining BG3 files manually. There are two main folders where you might find those files : the steam folder and the MAC-equivalent-of-the-AppData folder (the same folder where you would find Mods and Temp files).
Then reinstall.
