It's extremely difficult to know how it's going to be as reviewers will not tell us due to obvious NDAs- any information would likely cause mass outrage amongst players as I can easily see people having their excessive overblown expectations/hype come crashing into a thousand pieces, as one way or another , one group will never be happy with how it goes, and that leads to cancelled sales.

I personally do not expect tav to get any additional content, and once I saw durge also have the dreams sequences in BG3 that largely confirmed it for me. I personally, am fine with origins as origin characters can still make decisions. You are just RPing as you would in any other game... most people are generally fine with this, we don't see people complain about being link, commander Shephard, Gerald etc. Just a matter of expectations

I'm a big fan of the origin characters, and I'm super looking forward to playing them.

My only problem is that my two favorites (Shadowheart and Lae'zel) are both female, and I feel weird roleplaying a female. I mean, I kind of understand where an elf or, say, a half-orc is coming from, but women? They don't make any sense to me.

The NDA was lifted a couple days ago IIRC

So personally I don't think about it because I'm going to "miss" content regardless of whether or not I play as a Tav, dark urge, or one of the origin characters.
Yes, but the point of contention is that it looks like you will miss *more* if you play Tav vs any other Origin/Dark Urge. In regards to your Gith example, you could roll a Female Githyanki Fighter, and the biggest difference you'd notice between your Gith Tav's playthrough and playing as Lae'zel would be a marked lesser degree of story and content.
If you play gith with lae'zel you get a lot of new dialoge though.

I just made a gith barb who ripped Shadows pod door off and when I talk to her on the beach she joked that she was more loyal than my own kin
There is some unique dialogue that addresses the fact that there is more than one gith in the party, but generally speaking when I rolled a with a Gith, I noticed that npcs who reacted with some variation of 'oh look, there's a Gith' were reacting to Lae'zel first, and the player character second. Notably The whole Shadowheart/Lae'zel rivalry didn't really adequately address that you too are a Gith. Basically, aside from a handful lines, your interactions with Shadowheart remain unchanged.

Larian have said that they have added significantly more dialogue options tied to class and race. That seems to be the principal mechanism they're envisaging for helping us roleplay our Tavs in a more satisfying way, given by definition they don't have a fixed story. And origin characters are likely to often have their own specific responses to some challenges, so really taking full advantage of race/class reactivity might be something that's more unique to Tav.

Whether that will be fully satisfying, and whether it will be supplemented with potential additional links to the story and NPCs for Tavs of different races/classes (rather than just dialogue options) remains to be seen, but I do think that leaning into race and class, which are fundamental to D&D characters, makes sense as a way to preserve flexibility while giving options to connect our Tavs to the world.

I'm not really sure how it works, maybe you will correct me.

I think you'll miss out on her back story? And other parts.

Like with Astarion you might miss out on how he became a vampire? I don't know.
He tells you, how he became a vampire in EA

I imagine that Custom Origins will miss out on any unique abilities and items relating to the Origins, Astarion getting Vampire powers, Lae'zel getting herself a silver sword, Shadowheart unlocking her memories and true identity, Gale eating magical artefacts, Wyll's Pact with Mizora (we see a consequence of failing to uphold it with his new look) and Karlach with her infernal engine. These give a unique spin to the class and race combination discouraging from creating doubles of the same class the reduce the chance of unique in game moments.

Let's just hope Dwarfs are not left in the ditch in terms of those compared to other races. I know Duergar apparently can be quite reactive, but my RP will probably work better with more normal Dwarfs and I hope they are not suffering from lack of content due to not being writer's favorites.
