If I play a Sword Bard, with Archery Focus, and I add Fighter levels. I no longer need Archery since I have it and I doubt they stack (so I cant get it again and get +4?). If I add defense, will I get the +1AC?

That's just an example there are a ton of iterations...does that work?

Correct, you can't choose a fighting style you already have but you can add another style. So, your example should work.

In BG3 you can get at least 4 with Multi-classing, or 3 if you don't want to go too crazy (Champion 10 and Ranger/Paladin 2)

Yes, you can have multiple fighting styles, so long as they are different.

However, as per PnP rules a sword bard can only choose from duelling or two weapon fighting, archery is not available to them (it's College of Swords, not College of Bows).

Damn that just broke my heart. Makes sense though not sure where I got it would be more options. Now I won't get the +2 til character level 7 when I add a Fighter sublevel, and that's 1 less defense
