An extremely simple solution would be at the press of a key to remove every single UI elements. Like in previous Baldurs Gate games. Call it immersive mode.
Looks like F10 does just that, though I don't see an option to pick and choose specific UI elements.
Personally I like my UI clutter, and wouldn't want the minimap smaller as it feels like it wouldn't be as readable (now that it
is actually readable, which it wasn't really in EA, but at least it looks like there's something for folk who prefer a cleaner screen. Though I'm not sure how playable the game is without the interface. I guess you need to be clever with your key-mapping and pop up the UI at certain points.
