Personally, the red text in those screenshots looks "okay" to me, so maybe your monitor colour calibration is a bit off. However, it does look a little lower-res than the text around it.

I suspect this is a GeForceNow thing, not related to the graphics themselves, but actually the video streaming. I've never used GeForceNow myself, but common video compression algorithms use something called "Chroma subsampling" which can mean the colour information is a lower resolution than the brightness information, this can cause the borders of low-contrast regions to blur a little. Red text on a dark background is a prime example of where that might occur.

If GeForceNow has some video streaming quality settings, poking around with those might help.

Colour-blindness modes can help with things like this, but as far as I can tell, BG3 has no option for this.
