How does the multiplayer work.... I want to play koop with a friend. Did I understand it right, that only the host can create the 2 main charakters and then my friend took over one charakter?... or is it possible that he is involved to create his own character? ... I am not sure, that I understand it... sorry for my bad grammar. I hope everyone understand what I mean.

I only recently started the Enhanced Edition with a friend.

You make 2 main characters after selecting a new game, and I believe that in the progress of making the characters you can already invite the friend and he/she can select the starting class/build. If that doesn't work for you, you can also just share screen in Discord (tip) and select it for him/her (e.g. him/her choosing the character with you on controls) and you invite your friend right after the cutscene and play both.
