I mean, you find out interesting stuff about how the Gith get brainwashed - Lae'zel with the 'cure' for example. And you get, that Vlaakith, despite her reaction to you trolling her,seems not as powerful as the Gith make her out to be.
You start Lae'zel on questioning herself and her beliefs, which I find a very interesting development.
And you get the dexterity bracers, which helps me not needing Astarion in my group the whole time for traps and locks.
