I used to encounter this really often. Constant crashes to desktop with DXGI_ERROR_DEVICE_REMOVED. It would happen every time I play and multiple times. I have a 3080 ti.
I resolved this by undervolting my gpu and turning off vsync. For my undervolt I have it as 0.850 mv and 1875mhz. I have not had a crash (not even 1 crash) in over a week now since I made these changes. It would crash with this error again once I tried reverting back to my old settings (stock gpu or vsync on).
Made this forum account to post this information to hopefully help others as being able to play this without DXGI_ERROR_DEVICE_REMOVED crashes makes for a much more enjoyable experience.
