I feel the best races to add are those which are basically already in-game and work with armor textures/meshes, namely Hobgoblin and Aasimar. Aasimar is after all, just a new texture for a human body while the Hobgoblins already exist, although they may need more customization (and possibly a female body type? I don't know if I've seen any female hobs in the city). Class wise what I really hope for and feel like it would be great given that shapeshifted Druids seem to function alright, is cavalier introducing mounts. Gimme a horse Larian.
