You're tiring yourself out with constant restarts. Just pick one and stick with it. I played with a fighter and really liked it, I think the problem isn't finding a class but progressing with a character concept you like. Human Fighter with a beard did it for me, I find it hard to stick to anything non human/half-elf for some weird reason.
