I’m having a similar problem - accessed it yesterday at its release and was able to get to the character creation screen. I walked away to get something and when I came back it had crashed. After that, it won’t even progress to the start screen before crashing again.
I tried deleting/reinstalling 3x, made sure any save files were deleted, rebuilt the database in safe mode, updated system in safe mode, finally did a factory reset of my pS5 and still nothing.
