Strongly agree with your first and third points.

RE 1: Would personally like to see an option for scarcer food supplies to eliminate long rest spam but also an exhaustion-esque system to encourage long resting. Hard to get the balance right for different playstyles, so it'd be cool if players could tweak these settings at the start of a playthrough accordingly.

RE 3: would love to see attitude and NPC approval expanded upon, especially when bartering & trading. The current NPC attitude implementation seems pretty shallow when trading and there is a lot more Larian/modders could do with it.
