For some reason I can't pick up Ketheric Thorm's dead body, which is only 150 lbs and medium size. My character has 18 STR and can pick up most dead bodies, including Nightsong that is 160 lbs and medium. Are certain things scripted to be unable to be picked up, while others aren't? I like to pick up notable dead NPCs and put them in my camp, such as Arabella's dead parents (which is one way to reunite Arabella with them). The "Send to camp" option doesn't exist for dead bodies. But if I press Tab, I can drag a dead body to a companion who is *not dismissed* but has fast-traveled to camp. That companion can then drop the body at the camp.

I don't have proof, but yes I do think there are some things that are scripted to not be able to be picked up.

some things / bodies are wrongly weighted because Larian changed their mind half way into EA and forgot to go back and fix their templates

every now and then you come across an item [rocks are common] that is too heavy to move with some tressure behind it... the better ones are when you find a dead body that weighs like 2oc so you can pop them in your pockets

its their default engine settings behind it and play testing is how you find these mistakes

I notice that some dead bodies don't even have the "Pick up" option. But Ketheric Thorm does, yet when I pick him up, he is dropped to the ground immediately.

Your inventory weight may be inhibiting your ability to pick up/move a heavy object. It may seem counter intuitive but leaving the avatar/companion in your party with the highest weight capacity free of inventory will alleviate the majority of these issues. There are items in the game that are meant to be used outside of combat as well. Potions of storm/cloud giant strength (increase) potion of colossus (advantage) to strength checks in addition to character abilities/spells. Note that humans are granted a bonus to carrying capacity so the one with the highest Strength statistic may not necessarily have the highest Carrying Capacity. The game also has uses for some things and will not allow you to modify some object that would prohibit specific events. Many items that have a unique purpose have multiple ways to acquire them. When you have already obtained it or advanced the story/quest to where you should not have it, you see the 'item is unavailable" alert. This is different from when you cannot interact with an item due your size (either too small or too large). There are indeed still issues in the game, but do not be quick to call something a bug.
