With Githyanki + Knowledge Cleric you can get prof. in all Wis and Int skills, which is 10. Rogue + background will give you another 6, 2 skills short of 18, but you can safely skip Acrobatics (never saw a single check) + 1 of the dialogue skills, you don’t need Persuasion, Deception and Intimidation at the same time, they’re interchangeable in dialogue.

I’d go with Rogue 10 (you get extra feat as Rogue @ 10) / Knowledge Cleric 2
