I found a workaround for not being able to pick up item stacks on the ps5.

Hover the item stack in world you want to pickup. Hold X and quickly press the touchpad button that opens the map.

The map will open but will show an item split for the stack your trying to pick up. Set the stack to the max number and press X and it will pick up the stack.

No more leaving behind hundreds of gold at the toll house ?
