Along those lines, I also wish you could volunteer any party member to become a mindflayer, maybe with a persuasion check

At the very least, Lae'zel should volunteer to save her precious Prince of the Comets. I mean, the whole game is Orpheus this, Orpheus that, we even probably broke into a devils home to steal the tool for freeing Orpheus - and then she does nothing? Why should my character change for someone, she never met before? Githyanki freedom is a ll good and fine, but I'm not becoming a mindflayer for that.
