I'm currently doing Honour mode run with 5/5/2 Paladin/Warlock/Warrior. I went with 1h weapon + shield build, so he's primarily tank/support/face character but can do decent damage as well with smites and eldricht blast thanks to 20 charisma. Rest of my party is Lae'zel as pure Battlemaster Fighter, Gale as pure Evocation Wizard and Astarion as 5/5/2 Assasin/Gloom Stalker/Fighter. I'm in Act 3 now and so far it has worked really well.
Not having Cleric in the team is maybe bit risky, but I have camp cleric cast highest level Aid spell every morning for that sweet extra HP boost.
