Yes, knocking her out counts and talking with Zevlor is completely fine.
Kill Priestess Gut whenever you want to. As for Minthara and Razglin you want to do them both back-to-back, starting with Minthara. So knock out Minthara while she is Temporarily Hostile (don't let goblins bang any drums until she's knocked out) and then afterwards go straight for Ragzlin.
