I believe the path that leads to Zombie Astarion doesn't include flaying. The notes I read in Cazador's diary said he found his corpse ditched somewhere in a sorry state and brought back what he could for the ritual. I think this is what his diaries said whether you staked him, ignored him altogether, or gave him to Gandrel.
