I've been playing BG3 on my work laptop (M1 Max, MacBook Pro). I used to have no problems but then my company pushed out a cyber security utility called Zscaler. Since then steam has been unable to sync with the cloud. Since then I've continued to play without sync but now I'm leaving the company and will need to return the laptop. I don't want to loose my progress in the game. Is there anything I can do? Either to get steam to sync, or to copy my save files offline for future use?

I don't yet have another laptop with sufficiently high spec to install BG3. But I will get one at some point.

The savegames are located in the Public profile folder which is located in the following C:\Users\[windows username]\AppData\Local\Larian Studios\Baldur's Gate 3\PlayerProfiles\Public\Savegames\Story.

The AppData folder is hidden by default so to see it you’ll have to change the windows explorer settings to show hidden folders. An easier way to get there would also be to copy %LocalAppData%\Larian Studios\Baldur's Gate 3\PlayerProfiles\Public\Savegames\Story into the location bar in Explorer and hit Enter.

It might depend on what permissions you have on your laptop, as you might not be able to access these folders, but hopefully you can get there and copy your saves!
