I think Larian deliberately kept it ambiguous if Karlach meant she loved Wyll romantically. She's the type to say she loves her friends. With good approval, she will tell the player "Love You" after her breakdown after defeating Gortash, even if you aren't romancing her. She also says she adores the player on the dock, again, if they're just friends. I'm personally happy with the ambiguity. It lets people headcanon the Wyll and Karlach relationship that they like best, and gives future writers more options than a conclusive choice would.
