You can get Orin to appear in the sewers without breaking any quests, though getting to that temple with the altar not so much because you need to deal with the Murder Tribunal before you can get through a certain door.

Most of the quests in act 3 can be completed in any order, but just steer clear of any rowboats surrounded by rats you find because that leads to the point of no return. I do want to advise against one very specific order that leads to annoyances throughout the Lower City though.

Killing Gortash before destroying the Steel Watch Foundry. The Absolute seizes control of the Steel Watchers, and when Orin is also dead, they all begin attacking your party on sight. Quite annoying because how many avoidable fights it puts you in, especially if you're already level 12 and have no use for the XP!

New save for patches? That would probably be optimal, but I wouldn't want to restart just because of a patch. I've had several BG3 playthroughs be affected by patches. The most notable things about those saves are that a few of them somehow still have an old audio glitch and one has the appearance changing mirror in a different spot in one camp. Obviously I can't promise nothing bad would happen, but it seems improbable based on my experience with BG3 patches.
