Unarmoured Defence, Mage Armour, Barkskin and Draconic Resilience don't stack because they all change your base armour class. And yes it is confusing, I tried to be clever and use mage armour and defence too and then had to look into the wiki for the reason why it doesn't work. I feel the tooltip could be better.
You could ask Shadowheart for a Shield of Faith though or use the Bracers of Defence, if you want to give up the slot.
