I did not assign a gender. The default is what your body type matches. I simply leave it at that. Always.
I did not "assign sexual organ". You can switch all that b.s. off in the configuration, and thats about the second thing I turned off, right after karmic dice.
My character is a Bard, thus a social interactor and a crowd controller. I dont tank, I dont deal much damage, and healing in BG3 is extremely weak anyway unless you play a Cleric with the Life Domain. You mostly heal with potions really and primarily you "heal" by avoiding getting hurt in the first place.
