Not sure how dexterity zero would kill any character, but I guess one could interpret it as a partial brain death of all parts of the brain dedicated to movement.
And once a large part of the brain is dead, the death of the rest is only a formality.
Besides, even if its primarily a brain, it still needs other organs to run the brain. No can do without oxygen from lungs, for example.
