If I remember rightly in Ego Draconis enemy ranged attacks homed in on you which I found quite unrealistic, also making kiting harder.

Are there any changes to the way ranged combat is handled in Dragon Knight Saga?

Regarding the AddOn vs the remastered version:
If you don't mind playing the whole game again, then the remastered version may be the the better choice. They have completely remade the flying fortresses so that they should offer more in terms of varied gameplay, quests and puzzles. Also, this version includes better dodging (with this version it should finally be possible to dodge incoming arrows and special attacks) and reworked the enemy encounters and loot tables.

So yes, it will be possible to dodge ranged attacks in DKS

That's very great and from now on using a "Shield" have more value !

Well I'm not sure if you can use the shield to block the arrows. If I read it correctly, the arrows will no longer follow you, so you can dodge to right or left.

just bought DKS two days ago, and you can indeed dodge the arrows by rolling to left or right without to much trouble!

You can just strafe to kite from arrows, no need to roll.
