I don't know if this has been mentioned but it's worth noting:
-If you kill a trader you get all your stuff back that you sold to it/him/her
-I believe they also drop most, if not all of their regular inventory
-Probably is the same with pickpocketing, but I actually haven't tried pickpocketing yet

If you try to pickpocket a trader you can steal all the stuff he sells. Not sure about things you sold him though

Larian's Biggest Oversight, what to do about it, and My personal review of BG3 EA
"74.85% of you stood with the Tieflings, and 25.15% of you sided with Minthara. Good outweighs evil, it seems."

No need to be so violent.
You can knock them out and then loot all items and gold.
The next day they will have a new inventory waiting to be looted.
Worse, they remain at 1hp from the previous knockout.
Use a bit of stealth and there is virtually no consequences.

Fair point hahaha
In my own defense one I killed was a goblin trader, and the other was the halfing when I got angry that she would let me into her secret storage room. So.... I blew it up.
