I think I know the answer to this (no, the answer is no, you can't) through enough play throughs and class combinations. Has anyone figured this out?

I was able to toggle on my Riposte effect on my Fighter. That makes me think you can toggle on/off something like a opportunity attack as well. Is that what you mean?

Yes! But no, I can't toggle off opportunity attacks either. I couldn't toggle off the warlock Repelling Blast also.

I hope to have more control over our Reactions soon.

Sometimes I dont want to use my Attack of Opportunity on a specific mob if im trying to set something up tactically. Or as a Warlock my Hellish Rebuke.

On the bottom right side of the UI, tiny hotbar, there is one ore more red circles. These are your AoO options. You can activate or deactivate them by clicking on them, but it's quite buggy at the moment. It seems like you're supposed to be able to activate one or more AoO options to fit your needs.

You can definitely turn off great weapon master...but often it's slow..and once I had to reload for it to work
