There are lots of gameplay and other edited videos about Baldur's Gate 3 on youtube. Are there copyright restrictions in any from? Or is Larian happy about as much content as possible being published?

Yeah, it's fine. They're youtube videos- there's nothing illegal or bad about them.

There are full walkthroughs for most of the games on youtube. I am not sure why Larian would be different here.

You can make videos, stream, and get ad revenue as specified in the link without fear of copyright strikes.
