I have found a chicken rune in the cave with all the chickens and the dragon. But could not use this chicken rune to save `chicken man´. Insted I gave it to the "guy" or wizard or watever he was in high hall.

There is no way to save the man soul forged to a chicken; you can leave him alone, or kill the chicken and put him out of his misery. There is an achievement for killing the chicken, a white one in one of Bellegar's shrine areas nearby.
