Terminal
bash-3.2$ cd /Applications/
bash-3.2$ codesign -vvv Divinity\ -\ Original\ Sin.app

There is no way to convert an App Store version to Steam.

What was the Mac update? Was the App Store version working before this update, or did you just install it?

Try browsing to the '~/Documents/Larian Studios' folder and renaming the 'Divinity Original Sin' subfolder.
This folder contains the saved games, configuration files and a level cache folder. Deleting or renaming it will get the game to recreate it on startup; playing the game from a different OSX user account would effectively do the same thing.
After that, see if you can start D:OS. If so, create a new profile, exit and then copy a couple saves from the renamed folder into the newly created profile's savegames folder. If that lets you load the saves, move the rest of them over.
If that doesn't help, delete the new Documents D:OS folder and rename the original back again.

There is a way to verify the install folder with the App Store version:

Terminal
bash-3.2$ cd /Applications/
bash-3.2$ codesign -vvv Divinity\ -\ Original\ Sin.app

This takes a while, and will output some lines starting with '--prepared' or '--validated'. If everything is fine, it will end with:

Divinity - Original Sin.app: valid on disk
Divinity - Original Sin.app: satisfies its Designated Requirement

If you lower the game resolution and drop the graphics quality to Very Low, does that make a difference?

What about setting a frame rate cap, if it is not already enabled?

If you press the 'Cmd' key at game startup, you can try enabling everything in the 'Workaround' section. If that helps, you can repeat the process and selectively remove workarounds until you have just the one(s) needed.

If that doesn't help, please email supportdos@larian.com, with your system specs and a recent crash report.
To get system specs you can use the 'System Report' button from the 'About This Mac' Apple menu item or the 'System Information' app (in the utilities folder). Crash reports are collected in the "Console" application.

OSX 10.11 is not supported. It is still in early beta, so hopefully future updates may help, and it isn't a case of the changes causing a conflict with the game.
